Cauliflower Rice

Looking for a low carb option for rice? Look no further. Today I made cauliflower rice, with cilantro and lime. This can be paired with any main course as a great side. For starters you will need a head of cauliflower and a food processor or blender. I used my blender and I would recommend a food processor if you have one.

Chop up your cauliflower and place all of it in your food processor. Add a little bit of water just to help with the blending. Blend until the cauliflower resembles fine grain. Take out of food processor and place on a couple sheets of paper towel. Place more paper towel on top to get as much moisture out of the cauliflower as you can. See below.

After you have soaked up most of the moisture, chop 1/4 cup of onion and mince 1 clove of garlic. Heat up a medium sized skillet and add a tablespoon of oil.Add it to the pan before adding the cauliflower. Once the skillet is hot enough, add the cauliflower. It won’t take long for the cauliflower to cook so reduce the heat to low and add salt and pepper to taste, chili powder, cumin, garlic powder, onion powder, paprika, lime juice from one lime and butter. Turn heat up to medium and stir the entire time until it seems like the cauliflower is cooked.

To serve, chop up some fresh cilantro, lime wedges and avocado slices. Serve with meat or veggies. Enjoy!

  • 1/4 tsp. cumin

  • 1/4 tsp. garlic powder

  • 1/4 tsp. onion powder

  • zest and juice from 1 lime

  • 1 onion, sliced

  • 1 tbsp. olive oil

  • 1 tbsp. butter
