Chicken Fajitas


This gluten free, easy dinner or lunch option is perfect for a big family or for leftovers. Great for a Mexican themed dinner and will be sure to leave you satisfied!

-1 1/2 Chicken Breasts
-1 tsp. Garlic Powder
-4 Green Onions
-1 Green Pepper
-1 Red Pepper
-1/2 Cup of Onion
-1 1/2 tsp. of Oregano
-2 Tbsp. of Lime Juice
-1/2 tsp. of Chilli Powder
-1/2 tsp. Paprika
-1/2 tsp Red Pepper Flakes
-1 1/2 tsp of Sea Salt
-4 Tbsp. of Avocado Oil
-1 1/2 tsp. of Cumin
-6 Corn Tortillas
-1/4 Cup of cilantro

1. Preheat oven to 400 degrees. Place a standar size rimmed baking sheet in the oven while it heats so that it's nice and hot.
2. In a large bowl, toss 1 tabelspoon of oil with the chopped peppers and onion. Carefully remove the tray from the oven and spread the peppers and onions evenly across the sheet. Place in the oven and bake for 8 minutes.
3. Meanwhile in the same bowl, combine the chopped chicken, chilli powder, remaining oil, cumin, garlic power, salt, pepper, paprika coriander and chilli flakes.
4. Remove the sheet from the oven, drain off any excess liquid and add the chicken, make sure to separate the pieces of chicken from each other so they don't bake together.
5. Return the tray to the oven and bake for 15-20 minutes or until the vegetables are roasted and the fajitas are golden brown. Remove, squeeze the lime juice over top and serve with desired toppings.
