Root Veggie Buddah Bowl

I have been obsessed with root veggies lately. They are so filling and nutritious! Here is a really simple buddah bowl that has been a main stay for my dinners. The dressing is tahini dressing (recipe below) I roasted everything - even the avocados!

-Handful of Kale
-1 Beet, diced
-1/2 Purple Sweet Potato
-1/2 Avocado
-1/2 Can Chickpeas (season with salt, chili powder, paprika and garlic powder)

Tahini Dressing:
-1/4 Cup of Tahini
-2 Tbsp. of Dijon Mustard
-2 Tbsp. of Lemon Juice
-1 Tbsp. of Honey
-Pinch of salt

1. Place all ingredients for bowl on a baking sheet except the avocado and sweet potato (roast sweet potato longer and avocado only for 5 minutes). Place in oven for about 15 minutes.
2. Remove and place all ingredients together in a bowl. Enjoy!
