Stuffed Sweet Potatoes


Don't know what to make for an easy recipe tonight? Not a problem because I got one for you! This recipe has everything you have to feel energized. Stuffed sweet potatoes with ground turkey (can use any meat you want or go meatless) 
This meal has greens, protein and meat protein, healthy fats and good complex carbs. 
Here's what you need:
-4 Sweet Potatoes
-1 Can Chickpeas (garbanzo beans)
-1 Pound of Ground Turkey
-1 tsp. Ground Cumin
-1 Small Onion
-1 tsp. Olive Oil
-1 tsp. salt
-Lemon Juice
-Dried Cranberries
-Tahini sauce for topping
1. Preheat oven to 400. Rinse sweet potatoes and slice each one down the middle. On a baking sheet place each one on there and drizzle olive oil on each one. Place in oven for about an hour or until cooked all the way through.
2. After you have rinsed and cleaned the beans put in mixing bowl and put olive oil and seasoning in bowl. Mix around until they are covered. Spread out over baking sheet. Place in bottom rack for about 20-30 minutes.
3. While those are cooking, grab a cooking pan and cook the ground turkey. Use salt for seasoning. Cook until brown or cooked all the way through. 
4. Once sweet potatoes and chickpeas are done - pour into sweet potatoes with guacamole or avocado and drizzle tahini sauce on top.
